The holiday season conjures all sorts of magic….the magic of believing, the magic of love, the magic of giving. It captures the imagination, inspires creativity, encourages coziness and brings us together. When I think of New Year’s Eve I imagine some of us ringing it in wearing sequin dresses, velvet shoes and party hats, others having cozy nights in front of the fire and some skinny dipping in exotic locations while fireworks explode overhead. The wonderful thing is, there is no “right” way to celebrate a new year or the end of a decade….but there is the right drink. Luckily, I’ve created it just in time for you to share it with your partners in crime on New Year’s Eve…..it just so happens to be my favorite 2019 Festive Friday cocktail. It’s light, not too sweet and has a satisfying tart factor….something you could drink all night. I’m not sure what C and I will be doing to ring in the new decade but you can bet this will be in our champagne flutes.
Fig Fizz Punch
Ingredients
- 750 ml bottle brut champagne
- 400 ml lemon flavored rum ( I used Bacardi Limon)
- 375 ml lime flavored seltzer
- 250 ml fig simple syrup (directions below)
- 175 ml freshly squeezed lemon juice
- Limes cut into 8ths (enough to add one to each drink)
- Ice
Directions
- Add lemon juice, simple syrup, rum, seltzer and champagne to a punch bowl (add seltzer and champagne last)
- Stir gently to incorporate
- When serving, fill each glass with ice before adding punch, finish by squeezing in 1/8 of lime
- Alternatively you could add a block of ice to the punch bowl and skip adding ice to each glass
Fig Simple Syrup
Ingredients
- 2 cups fresh or dried figs (I used dried because nobody was selling fresh!)
- 1 cup water
- 1 cup sugar
Directions
- Cut figs in half or thirds
- Combine all ingredients into a medium sauce pan
- Heat over low, keeping it just below a simmer, for 20 minutes
- Remove from heat and let steep until cool enough to touch
- Strain into a glass container
